Yamashita: The individual raw ingredients are basic commodities such as butter, sugar, flour, etc. We do use a high-end chocolate in our recipes that call for chocolate, and we try to source locally as much as possible. But underlying the basic ingredient costs is the high cost of shipping the items to Hawaii.
